It is a dessert wine produced in the Setúbal Region, demarcated since 1907. Casa Agrícola Horácio Simões knew at a good time to invest in this variety that was extinct in the region and to produce this nectar.
Grape Varieties: Castelão
Tasting Notes: Color: Clear Topaz. Aroma: Floral, spices and evolution. Taste: Round, very soft and fresh. Aftertaste: Very prolonged.
Gastronomy: As an accompaniment to a good dessert served at a temperature of 14ºC.
Vinification: This liqueur from Castelão is the result of intense work divided between the vineyard and the cellar. The vineyard was monitored and pampered throughout so that yields did not exceed 1500 liters/ha and the grapes arrived at the cellar in a healthy state and ideal maturation. At the Adega, an “own” vinification for this product was idealized, different from what was usual in other companies in the region. It consists of an intense selection of clusters followed by a pre-fermentation maceration for 2 days, after which fermentation is allowed to begin very slowly, homogeneously throughout the vat, reaching 3/4 of fermentation in 3 days, benefiting this wine with the best wine spirits available on the market selected by the company's technicians, followed by a post-fermentation maceration of 6 long months. The final stage is carried out in 225 liter French oak barrels (used at least 6 wines), where it is concentrated. For this wine, the best barrels were selected.
Storage: It should be stored in an upright position, in a dry place with a constant temperature (10ºC-20ºC) and away from direct light.
