Identity: Hunch is what is in the soul of the winemaker, expressing a balance between the grapes, the “Terroir” and human intuition. In each harvest, Palpite is produced by selecting the best blocks of vineyards and the best barrels.
Grape Varieties: 30% Alicante Bouschet, 20% Aragonez, 20% Castelão, 20% Trincadeira, 10% others (Alfrocheiro, Baga, Tinta Carvalha, Tinta Miúda).
Soils: The vines are cultivated in very poor soils of yellow schists (60%) or granitics (40%), naturally giving very concentrated grapes.
Climate: Continental Mediterranean, hot and dry days, with very cold nights.
Tasting Notes: Dark violet color with concentrated aroma of red fruits; subtle notes of menthol with ripe fruit and round tannins. The finish is intense and persistent.
Vinification: Manual harvest by night. After sorting table, the grapes are slightly crushed and fall into the vat without pumps, to avoid further crushing. Spontaneous alcoholic and malolactic fermentations. Cuivason of 21 days.
Ageing: 18 months in French oak barrels..
Gastronomy: Serve with game dishes or seasoned red meats.
Storage and Service: Store at 12ºC, served at 16ºC to drink at 18ºC.
