We believe that Pico is vines, grapes and wine! We believe in surreal, heroic viticulture and almost touching the impossible. We believe in strong viticulture, thought out, made by hands, and above all, we believe that wine is made in the vineyard.
Grape Varieties: 90% Arinto from the Azores, 10% Terrantez from Pico, Verdelho from the Azores and Boal. Autochthonous varieties of the Azores, not to be confused with those of the mainland. Old Vineyards with 40/80 years.
Vinification: Steps on foot before pressing in a vertical stainless steel press with subsequent indigenous fermentation. Sulfiting after alcoholic fermentation and in pre-bottling.
Ageing: 72% of the batch in stainless steel on lees for 9 months. 28% in used barrels for 6 months.
Consumption Temperature: 12º-14ºC
Food Pairing: Fish, Seafood, Light Pasta and White Meat.
