Grape Varieties: Riesling 100%
Terroir: Vineyards located at 700m altitude on a gentle slope exposed to the southeast. Soils derived from metamorphic series of schist with quartz outcrops. Sandy loam texture with some rockiness.
Tasting Notes: Color: Crystalline lemon yellow. Aroma: Medium intensity, with notes of lemon and green peach, in addition to some floral. It still doesn't have the typical heady aroma of the Boca variety: Light to medium body, very vibrant high acidity, with notes of lemon juice, lime, yellow plum and some peach. Clean, direct, sharp, mineral finish, with a permanent lemony note.
Winemaking: Grapes harvested into 20kg boxes. Pressed bunches without de-stemmed (whole bunches) in a plate press, the must being sulphited, immediately pumped into stainless steel fermentation vats, where static decantation took place at low temperature and, after being cleaned, fermentation took place.
Fermentation: In stainless steel vats with cooling jacket at a temperature of 17ºC to 20ºC.
Ageing: In stainless steel tank for approximately 10 months.
Gastronomy: an extremely versatile wine, made to be on the table. Serve with ceviches, tempuras, sushi, fried fish, but especially with spicy Asian cuisine, especially with curry.
