Demarcated Region of Óbidos
Grape Varieties: Chardonnay (50%), Arinto (40%) and Vital (10%).
Tasting Notes: Deep citrine color. Delicate aroma and great aromatic complexity, with the presence of ripe fruit well balanced with vanilla notes from its aging in wood. Very well balanced in the mouth, wine with a silky texture, with excellent structure and harmony between fruity notes and barrel.
Vinification: The grapes were harvested manually into 15kg boxes in perfect sanitary and ripening conditions. After 24 hours in a cold chamber at about 6ºC, they were completely destemmed, slightly crushed and pressed to obtain a fruity must with good acidity. The Chardonnay must was fermented in French oak barrels and the remaining (50%) fermented in stainless steel at a controlled temperature of 16–18ºC for 21 days.
Ageing: 8 months in wood and 4 months in stainless steel vats.
Gastronomy: Ideal to accompany fatty fish and soft cheeses. It should be consumed at 12-13ºC. It can be consumed now or in the next 5 years.
