Controlled Denomination of Origin Óbidos
Grape Varieties: Vital (60%), Fernão Pires (20%) and Arinto (20%)
Tasting Notes: Citrus color. Fine and delicate aromas with lemon notes. In the mouth it is fruity and slightly acidic which gives it freshness.
Vinification: The grapes are hand-picked in a good state of ripeness. After destemming, they are slightly crushed and then pressed to obtain a fruity, balanced must with good acidity. This is defecated by cold and then inoculated with selected yeasts, taking place the alcoholic fermentation with temperature control (16ºC) for 15-20 days.
Ageing: 6 months stage in stainless steel vats.
Gastronomy: This São Francisco is an excellent accompaniment to prepared fish dishes and fatty grilled fish. It should be served at a temperature of 10-12ºC.
Consumption: Immediate or in the next 3 years.
