Grape Varieties: Encruzado (45%), Malvasia Fina (30%), Bical (10%), Cerceal (10%) and Gouveio (5%).
Tasting Notes: Wine of citrus color, perfectly transparent, of great aromatic intensity, with floral notes and citrus fruits - lime and lemon. In the mouth it is fresh, with good structure and suitable for good aging, in line with the classic whites of the Dão.
Vinification: Crushing the grapes with destemming followed by soft pressing in an automatic pressing machine. After separating the must, it was clarified by gravity and decanting. Fermentation, with selected yeasts, was carried out at a temperature of 16-18ºC. After fermentation, the wine was stored in a stainless steel tank, protected with inert gases, where it was naturally clarified by the cold of the Beira winter. The preparation of the wine for bottling consisted of a light fining, tartaric stabilization by the action of the cold and filtration through cellulose plates.
Ageing: In 225 liter French oak barrels for 6 months.
Gastronomy: should be served at a temperature of 10ºC, being excellent as an aperitif and to accompany fish or seafood dishes.
Skills: Wine to drink right away, although it has characteristics for a good aging for 4-5 years.
