White wine with a freixenist character from the Douro Superior. Intense and complex aroma of white fruits and with a mineral touch, balanced by aging in barrels.
Origin : Quinta dos Castelares is located in Freixo de Espada à Cinta, in the Douro Superior, at an altitude of between 500-600 meters. The soils are schist with high stoniness. The vineyard is implemented on double bard levels and vines at the top. Dominant orientation: North-East.
Grape Varieties : Códega do Larinho, Rabigato, Gouveio.
Tasting Notes: Intense and complex aroma of white fruits balanced by aging in barrels and with a mineral touch, with the Freixenist character of the Douro Superior.
Vinification: Manual harvest. Gentle pressing of the entire curls. Fermentation with temperature control at 16ºC. Partial fermentation in new fine grain French oak barrels followed by aging with fine lees agitation.
Ageing: In French (2/3) and American (1/3) oak barrels.
Gastronomy: Try it with oven-baked fish, cod, white meats and soft cheeses.
