Tasting Note: Delicate wine with citrus notes and the beginning of petroleum evolution characteristic of the variety. Quite mineral. Guard is suggested.
Production Mode: Sustainable viticulture. Minimal intervention.
Winemaking: Manual harvest in 20 kg boxes, with selection on a choice table. Total destemming with gentle pressing where decanting occurs naturally for 48 hours. Fermentation in stainless steel at 16ºC with agitation of fine lees.
Ageing: In stainless steel until August with bottling after gluing and light filtering.
Pairing: Accompanies sushi or octopus carpaccio.
