Tasting Note: Intense, garnet color. Attractive and complex aroma, combining good notes of wild fruits, smoked, fennel and spices. In the mouth it is tasty, enveloping, with a captivating freshness.
Gastronomy: Ideal for oven-roasted dishes (lamb and goat) and game dishes. Recommended consumption temperature 16ºC to 18ºC.
Winemaking: Manual harvest with selection on a sorting table. Total destemming followed by cold shock in a mass exchanger. Fermentation takes place in small, temperature-controlled stainless steel vats, followed by aging in French oak barrels for 12 months.
