Grape Varieties: Antão Vaz, Verdelho e Viognier.
Soils: Of granite/schist origin, clay loam structure.
Climate: Continental Mediterranean. High daily temperatures in the summer months, good summer temperature range.
Tasting Notes: Appearance: Crystalline, straw color with greenish reflections. Nose: Aroma of fresh, white-fleshed fruits, contributing to an elegant and complex structure. Mouth: This wine has excellent acidity, providing pleasant freshness and persistence.
Vinification: After a selection of grapes in the vineyard, they were transported in small boxes (15kg) in a refrigerated truck. At the entrance to the winery, a second selection was made on a sorting table. Vinification began with gentle pressing. The must was decanted cold (10ºC) for 48 hours. Part of this fermented in new and used French oak barrels and another part in stainless steel vats at low temperatures.
Ageing: After alcoholic fermentation, the wine remained for 6 months in vats and barrels (new and second year), with bâtonnage taking place fortnightly.
Serving Suggestions: This is an excellent wine to accompany fish, meat and salads. In addition to these, there are strong garlic dishes, such as Meat Spaghetti Aioli or Garlic Prawns.
