Viticulture: Our vineyards are in certified organic production and also certified within the Alentejo sustainability program.
Tasting Note: Honey orange color, very exuberant nose, notes of candied orange, some quince almost late harvest touches. Full attack, super textured in the middle of the test, gluttonous, but with a lot of freshness.
Vinification: The grapes, after the first pressing, are macerated for about a week, with the little juice left over (10% to 15%), then we press these masses again, the released juice is cold decanted with spontaneous fermentation, no sulfur dioxide is added until the end of fermentation. There is then a complete malolactic fermentation.
Ageing: Stainless steel
Gastronomy: Great white to start meals like a classic pairing of Foie gras, or a terrine, a very interesting white in the transition to red whites, due to its intensity and concentration.
Conservation and Service: Store at 6-8ºC, to serve at 10ºC and drink at 12ºC.
