A special wine. It comes from an old vineyard of Vital, on a slope facing west in the middle of Serra de Montejunto, in what is an iconic terroir for the expression of the variety. Evolved in a cement egg, it preserves the fruit associated with the variety and reveals unique texture and complexity.
Grape Varieties: Vital
Tasting Notes: Attractive lemon straw colored wine. Good concentration of aromatics, only achieved by the age of the vines that gave rise to it. Although showing a slight evolution, it has not lost freshness linked to floral notes, white fruit and a very well integrated wood, almost imperceptible, but contributing to its aromatic complexity. Dry wine, with fresh acidity, good texture on the palate, fruit and the touch of wood again well integrated, good volume resulting in a rich and balanced finish.
Vinification: Manual harvest and light pressing. Cold static decanting for 48 hours. Fermentation in cement egg with controlled temperature for 20 days. Aging in the egg on fine lees for 10 months.
Gastronomy: Meat, lamb and fish dishes cooked in the oven.
