Wine made in the Solera method, in which the next harvest attests to the previous one without any lees removal. The result is a three-dimensional Arinto dos Açores with the expression of the grape variety, the accumulation of fine lees and the combination of four harvests. Arinto dos Açores is an indigenous grape variety exclusive to the Azores Islands, having in common with mainland Arinto only its name and good acidity.
Grape Varieties: 100% Arinto dos Açores.
Soils: Volcanic lagido and cookie soils formed between 500 and 2000 years.
Viticulture: A unique terroir in the world, in the middle of the Atlantic Ocean, at the base of the volcanic mountain of Pico, the vineyards are planted in the crevices of the rock, near the sea, where you can hear the "singing of the crab", because this is where there is more sun and heat. A proximity of, sometimes, few meters that requires the vineyard to be protected by walls (currais), from the strong and saline winds of the Atlantic.
Vinification: Selective manual harvest in baskets of 20Kg, pressing of whole bunch, without SO2 until the end of fermentation. Transference after 12h. Spontaneous fermentation in horizontal vats of 600-1000L.
Ageing: In solera mode for 4 years.
Tasting Notes: Clean straw yellow color. Intense tertiary aroma, but mineral at the same time. Presence of iodine, honeycomb, citrus. Tense attack, very textured, complex, and intense. With minerality and acidity present.
Gastronomy: A more iodized and complex profile, yet fresh and mineral, ideal partner to a "marisco" rice, "açorda", fish stew and "caldeirada".
Conservation and Service: Keep at 6ºC to be served at 10ºC, and to be drunk at 12ºC.
Winemaker: António Maçanita
