Grape Varieties: Cerceal, Malvasia Fina and Gouveio.

Soil: Granitic, clayey.
Tasting Notes: Beautiful lemon yellow color with luminous golden hints, fine and persistent bubble that culminates in a beautiful necklace. Good presence of fruit, green apple and yellow peach and light toasted notes. Tropical aromas in the mouth, almost perfect balance between freshness and vigor, generous and elegant brioche notes, excellent structure and long aftertaste.
Vinification: The grapes, harvested in 20kg boxes, were gently crushed, without destemming, in a pneumatic press, being the wort immediately pumped into stainless steel fermentation vats, where the fermentation of the base wine took place. The wine was subsequently bottled and placed in a fresh cellar for the second fermentation according to the classic method, and after the aging in the bottle the “dégorgement” is à la glace ”.
Gastronomy: As an aperitif or to accompany a meal of white meat and fish dishes, seafood. Serve at about 8°C.
