Exclusively Sercial from different harvest years and with an average age of 10 years. Fermentation of skins, with fermentation and temperature control.
Varieties: 100% Sercial.
Tasting Notes: Light amber, with golden reflections. Woody and refreshing. Notes of orange iodine, nuts and toast. Well structured and complex in the mouth and of complex aromatic concentration. Notes of wood, with dense tannins, which combined with the dry characteristics of the grape variety, transmit different tastes, with nuts and beeswax predominating.
Gastronomy: Due to the characteristics of the Sercial grapes, wines produced are appetizers par excellence, are unique and unrivalled around the world. Must be served at a temperature between 15ºC and 16ºC. It doesn't have to be decanted. After opening, the wine will remain for several months in good condition.
Winemaking: Open spout with temperature control. Stalked and pressed grapes. Interruption of fermentation by adding neutral wine alcohol at 96% Vol.
Ageing: In 650 litres oak barrels.
Expected Longevity: Madeira wines, due to their characteristics and fortification, are of great longevity.
