Profile: Very complex white wine, rich with characteristics of evolution. Dense and structured.
Grape Varieties: A vineyard with more than 20 different varieties. A portion over 60 years old.
Tasting Note: Intense golden color. Intense and complex aroma. It reveals fragrances of citrus fruits, white peach, honey and nuts with a touch of toast. Unctuous, full-bodied, silky palate. Excellent acidity and a very long finish.
Vinification: Manual harvest. Manual choice of curls. Stripping followed by extensive skin maceration. pressing. Static clarification. Fermentation in 225 liter oak barrels.
Ageing: 36 months in 225 liter oak casks. 24 months of aging in bottle.
Ideal consumption date: 2021-2036.
