Complex and elegant wines created to be the perfect pair for delicious food. The aging in used french oak barrels increases their structure, body and flavour.
Terroir: CERTIFIED ORGANIC VINEYARD. At 500m distance, the dam of Montargil as a great influence in the microclimate, increasing humidity and lowering the temperatures.
Grape Varieties: CHARDONNAY (100%)
Tasting Note: Ripe citrus fruits, baked apple, orange peel and elegant buttery notes. The presence of the barrels is discrete. On the mouth has good acidity and round volume.
Winemaking: The grapes were hand-harvested, gently destemmed and cold macerated for 6h. Fermentation took place in used 400L and 500L french oak barrels and aged for approximately 9 months.
Food Pairing: Soft cheese, foie gras, white meat and more complex fish dishes.
