Terroir: Calcareous clay soils, rich and with a great capacity for exchange with plants. Mediterranean climate with Atlantic influence, great temperature range, maximum sun exposure with vines facing south, planted on a slope that provides excellent drainage of the land and thus contributes to the balance of the vines with reflection on low yields, concentrated grapes and acidity potential that produces fresh and long-lasting wines.
Grape Varieties: 100% Sauvignon Blanc, hand-picked at various levels of maturation.
Tasting Notes: Contained in the nose, notes of underripe citrus fruit, lemon zest and the fine spice of the quality barrel where it spontaneously ferments stand out. Complex in the mouth, with crunchy acidity that leaves us salivating. The orange leaf is present as well as the delicious salinity and complexity that will make it challenge many well-seasoned dishes.
Vinification: Fermentation took place in 225L barrels from various French Cooperages, without battonage, with a post-fermentation period of 5 months.
