Grape Varieties: Several varieties from old vineyards, with predominance of Rabigato and Viosinho.
Vineyard altitude: 550 to 700m
Soil: Schist/Granite
Tasting Notes: Yellow straw colour with a shiny aspect. The aroma is delicate with slightly toasted citric notes. Once in the mouth, it impresses for its good acidity and notable texture that convey it an enormous gastronomic aptitude.
Vinification: Total destemming, crushing and pressing under inert atmosphere in order to preserve the full aromatic potential of the grapes. The totality of the wine fermented in old french oak barrels for 6 months, with lifting of the fine lees or bâtonnage till the preparation of the final blend.
How to Serve: Serve at 10ºC, yet it reaches its full wholeness after 15 minutes, when the temperature has risen a little and the wine has oxygenated. Perfect for delicate fish and shellfish dishes, even though it may go very well with poultry and rabbit.
