Grape Varieties: Malvasia Fina (100%)
Tasting Notes: Light straw colored wine with a clear appearance; in the aroma, very delicate, the character of the variety is very evident, with notes of white fruits and white flowers, in full harmony with the very light buttery imparted by the wood. In the mouth it is very fresh, smooth and with a good finish.
Vinification: Crushing the grapes with partial destemming, followed by decanting the must by gravity. Fermentation was carried out at a temperature of 16-18ºC. After this, the wine was cleaned and stored in a stainless steel vat, under an inert gas atmosphere to preserve the aromas. We left the fine lees in the vat and stirred them with the help of nitrogen injected into the bottom of the vat (a sort of “battonage”) to give the wine a little more volume, complexity and structure. The preparation of the wine for bottling consisted of a light fining, tartaric stabilization by the action of cold and filtration.
Ageing: Carried out in 225 liter French oak barrels for 6 months.
Gastronomy: should be served at a temperature of 12ºC. Excellent as an aperitif and to accompany fish and seafood dishes.
Skills: It is a wine that satisfies young wine connoisseurs, but it will gain immensely after 4-5 years in the bottle.
