Tasting Notes: Clear and bright ruby color, highlighted by its delicate and youthful aroma. Reveals notes of wild berries and red fruits, complemented by subtle touches of spices and smoked nuances. Despite its youth, the wine impresses with its harmony. The tannins are fine and are perfectly integrated with the ripe fruit, giving the wine a medium structure and a dry character. The set is marked by its delicacy and elegance, highlighted by the freshness of the fruit and exemplary acidity. The finish is refreshing, appetizing and incisive, celebrating the combination of grape varieties.
Vinification: This red wine is produced from grapes of the Baga and Syrah varieties, from old vines, with an average age of 40 years located in Ventosa do Bairro at 100m above sea level and an average production of 5.2 tonnes/hectare. Harvesting is manual with prior selection in the vineyard, ensuring the quality of the fruit. Vinified separately, the process begins with maceration for 12 days at a controlled temperature of 16ºC. After fermentation, the wine ages for 6 months in French oak, followed by an additional period of 36 months in the bottle for refinement.
Pairing Suggestion: Ideal to accompany dishes with a certain amount of fat, such as cod, octopus and black pork. It pairs wonderfully with tasty rooster rice.
Serving Suggestion: Decant / 14ºC-16ºC
