The vines are planted on limestone slopes and exposed to the freshness of the sea winds. These conditions give the wines a mineral and fresh character and the natural production method allows them to evolve harmoniously and reveal themselves over time and at the table.
Grape Varieties: Encruzado and Arinto. Vineyards aged around 26 years.
Soil: Clay-limestone
Vinification: The manual harvest of the Encruzado variety took place in September and that of Arinto in August. Destemming for open mill, 4-day maceration with foot treading. Pressing and fermentation in barrel. Stage in used oak barrels for 11 months. No added oenological products, with the exception of small amounts of sulfur dioxide. It has not been filtered or clarified.
Fermentation: Used oak barrels.
Ageing: Used oak barrels for 11 months.
