Titular Rosé 2023

Grape Varieties: Touriga Nacional 50% e Tinta Roriz 50%.

Vineyards: Vineyards located at the Sub-Region of Terras de Senhorim between the Dão and Mondego rivers, planted between 400 and 500m of altitude in granite soils, with approximately 36 years.

Tasting Notes: Colour: Light and attractive pink. Aroma: Intense of red fruits with a slight floral touch. Mouth: Fruity and fresh with vibrant acidity.

Vinification: Initially, the red grapes selected for this rosé were quickly pressed, at low pressure, in a pneumatic press, so as to not to extract too much color. The resulting must was sent to a decantation tank, where it was subject to a temperature lowering to prevent the fermentation from starting for about 36 hours. After the addition of selected yeast, fermentation was carried out at controlled temperatures, between 15 and 17 degrees.

Pairing: Fish, pasta dishes, sushi, salads and light meats. Best serving at a temperature between 10-12ºC.
