Winemaking: Grapes crushed by feet in granite presses. Fermentation in stainless steel vats. Aging for 16 months in French oak barrels (40% first use).

Acceptable Storage Time: Over 15 years.

Pairing: Elaborate red meats, like Beef Wellington.
