Tasting Notes: Color: Deep ruby hue with violet hints. Aroma: Complex aroma of red berries with balsamic and earthy notes. Palate: Remarkable freshness and an excellent structure and balance, with high-quality tannins. It has a complex finish, showing great elegance and aromatic persistence.
Vinification: Mechanical Harvested during the night. Total Destemming. Maceration before fermentation during 48h. Fermentation with controlled temperature (22ºC-28ºC) in stainless steel vats. Maceration after fermentation between 5 and 10 days. Malolatic Fermentation in stainless still vats.
Ageing: 12 months in french oak barrels.
Gastronomy: Full flavored and roasted red meats, game and pork.
