Grape Varieties: Arinto (45%) and Chardonnay (55%).
Tasting Notes: Citrus yellow color. Intense aroma, with notes of citrus flowers, honey, toast, baking, pineapple and peach. In the mouth it is fresh, dry and well balanced. The aromatic sensations perceived by direct smell are confirmed.
Vinification: After a very delicate pressing of the grapes, the must fermented for 15 days in stainless steel vats at a controlled temperature. The elaboration, following the classic method, began 6 to 7 months later, with the refermentation taking place in a cellar for 25 days at 14ºC, followed by a period of aging in the bottle, on lees, of 20 months.
Ageing Potential: 2 years after disgorgement
Recommended Dishes: Appetizers, oily fish, white meat and desserts. Should be served at 8/9ºC.
