Soils: Clay with schist origin
Tasting Note: Greenish yellow colour. Aromas of stone fruit and pear, combined with hints of pineapple. Creamy, rich palate, balanced by a vibrant acidity, which betrays its original terroir.
Gastronomy: Perfect with fish, seafood or salads. Recommended consumption temperature between 8ºC and 10ºC.
Vinification: Night mechanical harvest. Total destemming followed by cold shock in a mass exchanger. Gentle pressing preceded by cold static decanting for 48 hours. Fermentation in stainless steel vats at controlled temperature, with subsequent aging on fine lees and batonnage for 6 months.
