Ensaio means test or trial. With this wines we pretend to show the best of our terroir and our grape varieties, testing them in different winemaking technics and different approaches.
Location: Montargil, Portalegre, Alentejo, PORTUGAL
Terroir: CERTIFIED ORGANIC VINEYARD. At 500m distance, the dam of Montargil as a great influence in the microclimate, increasing humidity and lowering the temperatures.
Grape Varieties: TOURIGA NACIONAL (100%)
Tasting Note: The aroma has fresh citrus and white fruits, together with some fresh baked bread. Light and crisp on the palate with a refreshing finish.
Winemaking: The clusters were hand-harvested and carefully sorted at the winery. Whole bunch gentle pressing to obtain a blanc de noir. Sparkling winemaking using the traditional method with free yeasts. The bottles were left to rest for 12 months.
Food Pairing: Fish, Seafood, Sushi, Vegetarian Dishes, Cold Salads, Ceviche and Fish Tartars.
