Produced from Old Vines of Pinot Noir grapes, this “Blanc de Noir” sparkling is produced through the classical method. The result is an elegant wine, with a distinct character, fruity aroma and a touch of freshly baked pastry. On the palate is unfolds with a fine fresh and complex bouquet. To be served as an aperitif or to match with shellfish or white meat dishes.
Grape varieties: Pinot Noir.
Tasting note: Delicate and elegant, with light notes of biscuit, suggestions of lemon blossom and orange peel. The citrine component is more evident in the mouth, expressive, with a refreshing lemon tone that prolongs the lively and lively finish.
Vinification: The grapes are crushed with the whole bunch, to avoid extraction of vegetal aroma. After the fermentation, the wine is bottled and re-fermented for a month at low temperature. The bottles are then aged for 16 month in the cellar, before the “degorgement”.
