Grape Varieties: 100% Rabigato
Tasting Notes: Yellow in color and bright tone, this wine shows a good mineral character and smoky aromas. It also offers fresh aromas of flowers and white fruits and also some notes of juniper and vanilla. In the mouth it is a little salty and mineral, typical of the Rabigato variety, with a long concentration and acidity. It is a wine with great aging potential.
Vinification: The grapes come from plots with an altitude of 550m. When they reach the cellar, before being crushed, they spend 12 hours in a cold room at a temperature of 10ºC. The next day they are pressed in an old vertical press, where the extraction is smooth and long. The must by gravity passes to underground vats, where it is decanted for about 12 hours. The next day, it is transferred to a French Oak Foudre and Concret Egg, where it ferments with indigenous yeasts and ages for 18 months. Naturally stabilized, subject to deposit.
Gastronomy: Fish and white meat dishes. Risottos and dishes with some fat. Consumption Temperature 12ºC.
