Our tradition of making wines in the vineyard, began in the 18th century with my great-great-grandfather Joaquim Ribeiro do Amaral. The vines are planted at an altitude of 500m, in granite soils with shale patches, in Oliveira do Hospital, in the sub region of Alva. The varieties we selected for this wine are Jaen, coming from vines planted on our farm, they were harvested by hand and carefully transported to our cellar, partial destemming, vinification in stainless steel vats, at 24ºC, pumping over, aging for 6 months of about 20% of the batch in new oak barrels.
Sub-region: Serra da Estrela or Alva
Soil: Granitic
Castes: Jaen. Vineyard age 25-30 years.
Tasting Notes: Color: Intense ruby red. Nose: Clean, with fresh red fruit. Mouth: Wine with good intensity, round tannins and good balance between acidity and fruit. Typical plant element of the variety.
Vinification: After a selected harvest of grapes of the variety, partial destemming was carried out without crushing, followed by fermentation at a controlled temperature of 24.5ºC in a closed vat.
Ageing: 70% of the batch aged in stainless steel and 30% in French oak barrels for 9 months.
Pairing: White meat dishes and fatty fish dishes.
