Volcanic Series are wines of volcanic origin, where the soils, poor and stony, defy the very definition of agricultural soil. In this almost "mother rock", in the middle of the Atlantic and at the base of the highest mountain in Portugal, where nothing else could grow, the grapes of this Volcanic Rosé, matured as much as the brave Azorean climate allowed.
Grape Varieties: Field blend. Agronómica, Aragonês, Castelão, Malvarisco, Merlot, Saborinho, Syrah, Touriga Nacional.
Tasting Notes: With a light pink color, with touches of cherry, has a very intense nose of ripe strawberry, married with notes of iodine and black pepper. In the mouth it surprises, it is textured, saline, but fresh, with the salts persisting and stinging the palate. It is a Volcanic Rosé.
Vinification: The bunches are carefully selected in a selection table and then the grapes are gently crushed and transported to the fermentation tanks without the aid of pumps. Here they macerate for 3 to 6 hours at low temperature and the resulting sangria ferments spontaneously at 12ºC in order to maintain all the aromatic potential.
Gastronomy: Fresh, elegant and saline rosé like few others. Ideal partner of fish dishes, seafood and salads. It has volume and structure for white meat dishes. Perfect for Indian, Thai and sushi dishes.
Conservation and Service: Keep at 6-8ºC to be served at 10ºC, and to be drunk at 12ºC.
