Champagne from the Pinot Noir grape variety of Bisseuil Premier Cru of the Montagne de Reims.
Varieties: 100% Pinot Noir from Bisseuil.
Tasting Note: The nose is rich in dried fruits and yellow fruits with some toasted notes. The palate is ample, fruity passing from red fruits to dried fruits with a subtle smoky hint. The finish is long, precise, tense and saline to whet the appetite.
Pairing This Champagne will ideally accompany all starters or dishes based on white meats such as a beautiful veal chop or a simple pork crust pie. The pairing will be very fair with more elaborate dishes such as squab and pan-fried mushrooms or sweetbreads with capers.
