Grape Varieties: Perrum
Tasting Notes: Color: Intense, citrus. Aroma: intense, complex, predominantly citrus and mineral notes. Palate: It has a high volume in the mouth, revealing its fermentation process. Complex, fresh, balanced with long persistence.
Vinification: (Fermentation with skin maceration) Manual harvest in the box during the cooler hours of the day. Destemming, thermal shock, decanting the must, fermentation with controlled temperatures in stainless steel vats (16-18ºC), pressing, batonnage with fine lees, stabilization, filtration.
Ageing: Aged in French oak wood for 6 months. After bottling followed 6 months in bottle ageing.
Gastronomy: Goes well with all fish, white meat, pasta and sushi dishes. It should be drunk at a temperature of 12ºC.
