Grape Varieties: Pinot Noir and Baga.
Tasting Notes: Made with Pinot Noir and Baga varieties, this sparkling wine reveals great complexity. Empyreumatic notes stand out, such as toasted bread, biscuits, nuts and some candied fruit. Great presence in the mouth, unctuousness, freshness, harmony and a lot of elegance. Fermented in bottle according to the Classic Method.
Vinification: The Pinot Noir variety was harvested in the 3rd week of August and the Baga was harvested in the 4th week of August. Manual harvest in perforated 15kg boxes. Use of tear wort with dry ice cooling. Balanced maturation, fermentation in stainless steel tanks at a controlled temperature of 14ºC. Edition in March according to the Classic Method. 50 months of stage on the fine lees.
