With grapes from the Douro Superior, namely from a vineyard that is about 60 years old, selection of red grapes from native varieties. A wine like it used to be. With structure, body and freshness.
The Proibido and Permitido wines increasingly have a common denominator: Minimal intervention both in the vineyard and in the cellar. We therefore respect what the vineyard gives us, and we try to make the transformation of grapes into wine as natural as possible.
Grape Varieties: 100% red grapes (barca ink, yellow ink, francisca ink, rufete, and others)
Soil: Schist/granitic origin.
Age of Vineyards: 60 years
Tasting Notes: This wine has an aroma of red fruits. Fresh, light and appetizing wine.
Vinification: After manual harvesting, and transport to the cellar in small boxes (18kg-20kg), the grapes were trodden by foot in a small press. Fermentation started spontaneously and then it was pressed. It fermented the rest of the time in used 225L barrels.
Ageing: 6 months in used barrels.
Pairing and longevity: It is a challenge to gastronomy. It should be drunk at 15ºC. It can be consumed immediately or in the next 5 to 10 years, as long as it is stored lying down in a cool, dry place, protected from light and without temperature fluctuations.
