With grapes from the Douro Superior, namely from a vineyard that is about 50 years old, with 10% white grapes and 90% red grapes. Hand-stemmed grapes. Much of the winemaking is done without electricity.
The Proibido and Permitido wines increasingly have a common denominator: Minimal intervention both in the vineyard and in the cellar. We therefore respect what the vineyard gives us, and we try to make the transformation of grapes into wine as natural as possible.
Grape Varieties: 10% white, 90% field blend reds.
Soil: Schist origin.
Age of Vineyards: 50 years
Tasting Notes: This wine has an aroma of red fruits. Fresh, light and disconcerting wine.
Vinification: After manual harvesting and transport to the cellar in small boxes (18kg-20kg), the bunches were hand-de-stemmed and the grapes trodden by foot in a small press. Fermentation started spontaneously and lasted approximately 20 days. It was transferred to a pitcher without the use of electricity.
Ageing: 10 months in barrel. Bottling without filtration or stabilization.
Pairig and longevity: It is a challenge to gastronomy. It can be consumed immediately or in the next 5 to 10 years, as long as it is stored lying down in a cool, dry place, protected from light and without temperature fluctuations.
