Proibido and Permitido wines increasingly have a common denominator: Minimal intervention in both the vineyard and the cellar. We respect what the vineyard gives us, and we try to ensure that the transformation of grapes into wine is as natural as possible.
Grape varieties: 50% Touriga Nacional, 40% Touriga Franca, 10% old vines
Soil: Schist Origin.
Sub-Region: Douro Superior
Winemaking: After manual harvesting and transport to the winery in small boxes (18kg-20kg), the bunches were destemmed and the grapes were trodden in granite presses where they fermented for about 10 days.
Maturation: 6 months in barrels (80% used, 20% new). 3 months in bottle.
Tasting notes: This wine has a red fruit aroma with a light touch of barrel. In the mouth it is structured, gastronomic and long.
Pairing and Longevity: Red meats, grilled, served at a temperature of 16ºC. It can be consumed immediately or within the next 10 years, as long as it is stored lying down in a cool, dry place, away from light and without temperature fluctuations.
