Tasting Notes: The Encruzado variety reveals its full expression in this distinct Dão wine. Created and vinified at Quinta da Vinha Paz, with granite soils and cool nights, these characteristics provide great freshness and minerality. It ages partially in French oak barrels with a smooth and long bâttonage. It presents a very elegant and refined aroma, expressing notes of linden and orange blossom, married with notes of white pulp and quince fruits, with a light tropical flavor, combined with nuances of vanilla. In the mouth, the structure is well designed, with a refined balance between fresh acidity and elegant minerality. The finish is long and persistent. It should be served at 12°C, accompanying fish dishes or in moments of good coexistence.
Winemaking: The grapes are transported in 22kg boxes and completely de-stemmed. Press and decant into a stainless steel tank where fermentation begins with only fine lees and without pumping over at a temperature of 15ºC. Alcoholic fermentation lasts 3 weeks Does not carry out malolactic fermentation
